Mitolo 在澳大利亚拥有一批狂热的追随者，并因生产巴罗萨谷最好的葡萄酒而闻名。Mitolo 家族于 20 世纪 50 年代来到澳大利亚，酒庄的实际所有者 Franck Mitolo 的父亲开始种植农作物（主要是土豆）和少量葡萄；当 Franck 于 1995 年接手酒庄时，他将整个庄园改造成葡萄园，以可持续的方式种植（不使用化学品），并因专注于精心酿造小批量高品质葡萄酒而迅速成名。

Savitar 的每一包水果都要在果皮上发酵 15 天。在果皮上发酵的时间稍长一些，可以确保整体结构更紧密，为延长陈酿时间奠定基础。发酵后，葡萄酒被压榨，然后转移到橡木桶中熟化。在 100% 新的中度至轻度烘烤桶中陈酿 18 个月（100% 法国橡木桶），然后精心挑选单个酒桶进行最终混合。
