The evening began with a warm welcome featuring tantalizing canapés like Quail Egg with Horseradish Cream and Asian Spicy ‘Beef Tartar'. Paired with Ayala 'Brut Majeur' Champagne, the refreshing bubbles set the perfect celebratory tone for the night.
Mise en Bouche
The second course highlighted Baked Sabah Lobster with Asparagus Roll, Miso Soy Daikon Radish, and Leek Yoghurt Velouté. The pairing? Chateau Peyredon Lagravette Bordeaux Blanc, a zesty, aromatic white that enhanced the dish's delicate flavors.
First Course
A luxurious Sous Vide Lamb Lollipop coated with Green Herbs took center stage, accompanied by Fine Corn Mousseline and Charred Shishito Peppers. The structured, bold notes of Alias Croizet-Bages Pauillac 2014 elevated the dish with its rich flavors of blackcurrant and spice.
Palate Cleanser
A refreshing Raspberry Sorbet added a light intermission, preparing diners for the main attraction.
Main Plate
The star of the evening was the Duo of Beef, featuring Truffle Wagyu Beef Pithivier and 65 Degree Argentinian Mignon. The dish, complemented by Curried Shallot Fondue and Potato Pinwheel, found its perfect match in Chateau Pontet Fumet St Emilion Grand Cru 2018, a silky red with layers of depth and flavor.
Sweet Ending
The meal concluded with an indulgent dessert: Caramelised Baked Pears, Blue Cheese Crème Brûlée, and 70% Chocolate Cream. Paired with Le Tertre De Lys D’or Sauternes 2018, the wine’s honeyed sweetness was the perfect finale to an unforgettable evening.
