The 2013 Dom Pérignon is a lovely wine defined by the long cool growing season. Offering up aromas of crisp stone fruit tangerine oil buttered toast pear almonds and clear honey it’s medium to full-bodied ample and seamless with bright acids and a pillowy enveloping profile concluding with a long saline finish. Vincent Chaperon recalls that shatter at fruit set moderated yields and that a drying east wind in the weeks before harvest helped to maintain the good sanitation necessary to wait to pick at full maturity.

Jack Daniel’s is made in Lynchburg, Tennessee, a small town with the population of around 400, located 75 miles south-east of Nashville. Ironically, given it is home to one of the most famous whiskeys on the planet, Lynchburg is a dry county, and has been since the Prohibition era, which means that it is illegal to sell alcohol in any shop or restaurant.

Light with plenty of sweetness. There are hints of dry spice and oily nuts, a touch of smoke. Quite smooth and soft with notes of banana milkshake, a mixed nut note, a touch of caramel with creme anglaise. Sweet finish with a little cereal sweetness and toasty oak.

Often referred to as the classic Australian Red Wine, Shiraz is an easy to drink, all-time favourite. Yellow Tail Shiraz is vibrant, smooth, and rich. Rich and smooth, with juicy red berries and hints of liquorice and spice. With steak or in front of a roaring fire.

The 2017 Chateau Pape Clement Blanc showed spectacularly well and is one of the wines (if not the wine) of the vintage. Based on 55% Sauvignon and 45% Semillon aged 14 months in barrel, it offers powerful notes of honeyed melon, tart pineapple, green figs, and floral notes as well as a terrific sense of minerality. Concentrated, medium to full-bodied, with rocking levels of acidity, give it 2-4 years and enjoy over the following 15 years or more.

Shiraz from the Frankland River and Mount Barker subregions of the Great Southern are blended to highlight the distinctive varietal and regional qualities of our best sites.  The expression of Shiraz from this cool, continental climate is characterised by an intensity and concentration of dark fruits with traces of spice, earth and guiding tannins.

The depth and dimension of sweet fruit on the palate gives plushness and softness to the middle palate and fine supple tannins, a gentle mineral-like grip to finish. A Shiraz full of plush and primary fruit, embellished with sweet and savoury spice notes, captured in fine supple tannins.  Drink with osso bucco on polenta or a salad of bresola, shaved cauliflower & radicchio.  Drink now or cellar for up to 7 to 10 years.

Polished, high toned aromas of buttery caramel, artisan chocolate covered apricots and apples, anise, and roasted nuts. A rich yet supple entry leads to a dry-yet-fruity full body of dense dried fruit, nut, sweet spice, chocolate, and cigar box flavors. Finishes with an exceptionally long finish of toffee, leather, chocolate covered espresso bean, anise cookies, tobacco, and lavish brown spices. A gentle giant of a cognac to contemplate and savor. An ideal cigar Cognac.

This is a genuine ‘wow’ wine – you could be forgiven for thinking you were in the grand climats of Burgundy when tasting it.  Fine and precise with fresh sugar snap pea and fennel, white nectarine and a hint of struck match. There is tension and length on the palate with classic Tolpuddle Vineyard acidity and fine, chalky texture adding complexity and interest. A lesson in elegance and restraint.

Sierra Tequila Reposado is traditionally distilled twice in copper pot stills. It matures for nine months in toasted oak barrels, which gives it its shimmering golden color. Reposado is the favorite variety of tequila among Mexicans. The fresh, irresistible fruitiness of Sierra Tequila Reposado carries delicate notes of vanilla, caramel, and herbs. A recipient of numerous international awards, Sierra Tequila Reposado diversity of aromas makes it especially complex. Its rich taste and pale distinctive golden colour are originating from maturing in oak barrels.

Site : Plot-based selection on hills ideally located south of the village of Chablis.

The Vintage 2022 : After a winter characterized by marked variations in temperature between January and February, spring started with mild temperatures. A sequence of cold weather in April was followed by warm temperatures in May but the lack of water was very noticeable and could not be compensated by the rainy storms of June. Summer was marked by several and long heat waves and the storms of the end of August were most welcome. The harvest at Chanson started on August 30 with a team of 100 persons and ended on September 13. 2022 vintage was quite generous both in volume and quality and the white wines are well-balanced, precise and refreshing.

Tasting : Pale gold colour. Floral fragrances (Hawthorn) mixed with citrus fruit aromas. Delicate minerality. Refreshing attack. Well-balanced, tense and precise. Long and refreshing finish with light mineral notes.

Food pairing : Pâté, lobsters and poultry as well as some goat cheeses.
