This fairly uncommon Gin comes from the Black Forest in Germany, Monkey 47 contains a fairly unusual ingredient: Cranberries! The 47 comes from the number of botanicals that go into this unique gin, and the fact it’s bottled at a healthy 47%. Predictably complex, this is a robust and powerful gin with plenty of spice, fruit and herb flavours. It’s very well structured, and difficult to unpick but a citrus fresh start segues into pine and wood notes for a drying finish.

This limited release is an ode to the Curiously Small Stills that play an integral role in how we craft our precious spirit. Our Curiously Small Stills are one of the defining features of our distillation process. The curiously small stills give the spirit perfect contact with the copper, which helps to concentrate our ‘new make’ spirit and create the rich and robust character that The Macallan single malts are renowned for.

As the liquid is heated in the stills, the alcohol within boils and turns to vapour, travelling over the neck of the still, where it cools and is condensed back into liquid. In larger and taller stills the alcohol vapour has a long way to travel, resulting in heavier vapours falling back into the boil and only the lighter vapours finding their way into the condenser. With small stills we can collect a dense and rich style of spirit, as the alcohol vapour does not travel as far.

Distilling our full-bodied spirit ensures that we can mature our whiskies for a long time, allowing the spirit to soak up all the intricate flavours of our oak wood casks. With 100% natural colour, this single malt whisky has unique flavours of pear and white peach, and a smooth mouth feel with a finish of toasted oak.

‘Buio Buio’ is is deep ruby red in color withcherry highlights. There are complex aromas of red berry fruit and blossoms, balsamic notes, and hints of spices and new oak on the nose. It is rich, full-bodied and well-balanced on the palate with elegant tannins and a long, lingering finish. Pairs well with first courses of game, red meat stews, and aged cheeses.

The wine bursts with aromas of ripe cherries, blackberries, and plums, accented by hints of violets and subtle spice. The palate is soft and velvety, offering juicy dark fruit flavours balanced by a mild sweetness that rounds the edges of the tannins. The finish is smooth and harmonious, leaving a lingering note of ripe berries. Easy-drinking and versatile, it pairs beautifully with charcuterie, soft cheeses, roasted poultry, or enjoyed on its own.

The Macallan Double Cask 30 Years Old, aged for thirty years in a harmonious union of American and European oak sherry seasoned casks, to create a unique taste and character. Double Cask 30 Years Old is a charming combination of cinder toffee, honeycomb, vanilla and red apples – and I wanted to depict the vibrant colours and varying textures of these luscious flavours in the image, reminiscent of the great Flemish still life paintings from the 17th century.

Acclaimed photographer and artist Erik Madigan Heck was inspired by nature and the landscape of The Macallan Estate when capturing the complex flavour of The Macallan Double Cask 30 Years Old.

The whisky itself is a rich and luxurious medley of flavour, and Erik Madigan Heck used natural light to capture this depth of character in his still life. The reflective surface enhances the idea of flavours blending– almost as if seamlessly merging together as one – with the soft focus echoing the long-lasting taste experience.

The whisky’s golden acorn natural colour is the focal point of the shot. Its rich tone and translucent glow has influenced the colour palette of the piece as a whole, with the soft caramels and browns and pops of red and green once more showcasing the depth of its flavour profile.

The nose offers delicate perfumes, intense and persistent. The flavour is clean, well balanced, harmonic; on the palate it gives sensations of creamy smoothness.  Ideal distillate at the end of a meal, can be enjoyed during the entire evening. Perfect with bitter chocolate.

Soil : Chalk, marl and limestone.

Site : The Premiers Crus vineyards of Domaine Chanson are aged in casks in the Bastion cellars. This cuvée is a blend of grapes sourced from selected plots among the Premiers Crus of the domaine located on the hill of Beaune.

The Vintage 2022 : After a winter characterized by marked variations in temperature between January and February, spring started with mild temperatures. A sequence of cold weather in April was followed by warm temperatures in May but the lack of water was very noticeable and could not be compensated by the rainy storms of June. Summer was marked by several and long heat waves and the storms of the end of August were most welcome. The harvest at Chanson started on August 30 with a team of 100 persons and ended on September 13. 2022 vintage was quite generous both in volume and quality and the white wines are well-balanced, precise and refreshing.

Sierra Tequila Reposado is traditionally distilled twice in copper pot stills. It matures for nine months in toasted oak barrels, which gives it its shimmering golden color. Reposado is the favorite variety of tequila among Mexicans. The fresh, irresistible fruitiness of Sierra Tequila Reposado carries delicate notes of vanilla, caramel, and herbs. A recipient of numerous international awards, Sierra Tequila Reposado diversity of aromas makes it especially complex. Its rich taste and pale distinctive golden colour are originating from maturing in oak barrels.

Before Don Facundo rewrote the script, white rums were harsh, crude and unrefined. In 1862 he created Bacardi ‘Carta Blanca’ following 10 years of dedication to craft the perfect rum. With distinctive vanilla and almond notes which are developed in white oak barrels and shaped through a secret blend of charcoal for a distinctive smoothness. The perfect balance of subtle and delicate flavors means it doesn’t dominate like gin or disappear like vodka – making it perfect for mixing classic cocktails like the Mojito.

Oak-aged for 24 months, this shows a clear ruby red color.  On the nose, the attack is fruity and floral at the same time with hints reminiscent of blackcurrants, blueberries and raspberries; floral notes reminiscent of violets and dog roses follow. This is followed by spicy notes reminiscent of black pepper, cloves and star anise. Delicate tertiary notes and freshness given by balsamic and citrus scents are also interesting. The palate reveals a nice acid-alcoholic component and the tannic texture is well present, dense and silky.

Bols Cacao Brown is a dark liqueur packed with the rich flavour of bitter, dark chocolate and hints of orange and vanilla. Because the cacao (chocolate) flavour comes from the percolation of cacao beans, Bols Creme de Cacao Brown tastes more like dark chocolate than the distilled-not-percolated Bols Creme de Cacao White, which tastes more like milk chocolate. Creme de Cacao liqueur has been around for a very long time, and Bols has always been the predominant brand, featuring in both the original Alexander and the wildly popular variant, the Brandy Alexander. In the 80s, Bols Creme de Cacao was used principally in creamy and ice cream drinks, but lately it has proved supremely adaptable to various after-dinner cocktails like the Mulata Daiquiri and After Eight cocktail.

Originating in Kyoto in the 1920s as a way of utilising leftover leaves, stems, stalks and twigs, Hojicha is a roasted green tea from Japan. The tea has a deep umami character and notes of nori seaweed, roasted hazelnut and delicate smoke, with dry and woody tannins.

Pairs well with sushi or mushroom risotto.
