‘Lion et Dragon’ is among the great Rose of Provence, a small batch production of hand-selected organically-grown grapes from the estate best parcels, aged in oak barrels. The Lion and Dragon, present on the estate coat of arms, derived from the Knights Templar history of the area: the dragon, emblem of the city of Draguignan, and the Lion representing the town of Lorgues – both placed under the protection of the Provence Sun.

Harvested by hand early in the morning and placed in crates, the grapes are then kept in a cold room for 24 hours. The berries then pass on the sorting table and are sent to the press. The cold pellicular maceration, long for a rose, makes it possible to extract the aromas and the typicality of the grape varieties as much as possible, without taking on colour. The juice thus obtained is decanted at low temperature then sung in thermally controlled barrels and ‘Foudres’ (large oak casks), where natural fermentation then begins thanks to their native yeasts. The aging lasts about 6 months.

The Lion & Dragon Rosé from Château Roubine in Provence reveals a bright, light red color in the swirled glass. When swirling the wine glass, one can perceive a first-class balance in this rosé wine, as it does not stand out on the walls of the glass, neither watery nor syrupy or liqueur-like. To the nose, this Château Roubine rosé wine shows all sorts of lemons, strawberries and pears. As if that weren't already impressive, the aging in large wooden barrels adds other aromas like toasted wood.

This rosé wine is never coarse or meager, as one might expect from a top wine. Balanced and multifaceted, this light rosé wine presents itself on the palate. In the finish, this youthful rosé wine from the wine-growing region of Provence finally inspires with considerable length.
