At the heart of the estate is the 'Bastion,' a historic defense tower built during the reign of Louis XI and completed under François I. With 8-meter thick walls, this impressive structure has been part of Domaine Chanson since the French Revolution. Its constant temperature and humidity make it ideal for aging wines. Today, the Bastion houses barrels across four levels, with the first three dedicated to red wines and the top floor reserved for whites. This unique aging cellar plays a vital role in the production of Chanson's exceptional wines.
