Fragrant dark fruits with hints of red cherry and spicy oak. Fruit driven palate, blackberry and cherries with hints of vanilla oak. Shiraz and Cabernet Sauvignon make wonderful partners in traditional Australian blend. The spiciness of the Shiraz and berry flavours of the Cabernet Sauvignon make for a harmonious blend. Harvested at optimum flavour ripeness, then fermented on skins with some American oak.
Vibrant purple with deep crimson hues. Lifted aromas of black currant, blueberries over hints of bay leaf and milk chocolate. The soft medium bodied wine shows layers of blackcurrant and red berries, complimented by the soft supple tannins and nuances of chocolate oak. Pairs well with slow cooked beef ribs or a hearty pasta.
This highly awarded and pedigreed botrytised dessert wine is made in the style of the great French Sauternes. A medley of quince, fig, honey, creme brulee and citrus marmalade with a refreshing acidity which offsets the richness and lusciousness to give a deftly balanced finish. Nutty oak adds to the tactile layers of this wine adding to the impressive length and style.

"Blackberries, blueberries and red licorice. Confected mulberry and cinnamon spice. Tannins are present, and a hint of oak char comes through on the finish."
Halliday Wine Companion August 2024
Fresh grassy Semillon and stone fruited Chardonnay are complexed by French and American oak for a beautifully luscious balanced wine. This fresh zesty wine shows citrus and tropical notes balanced with a hint of oak and a creamy palate.
It offers a bouquet with perfume of classic Pinot Noir – Red berries, violets, earthy, forest and herbs; textural, elegant flavours of cherry and strawberry, with soft tannins, medium weight, quite a plump style.
Elegant lively floral, white flowers, and nuance of nougat. Brioche-like fruit with hazelnut and white peach. Soft creamy flavours with balanced acidity and texture. Flint, citrus and floral notes on the nose. Gently textured palate, savoury, chalky phenolics, hints of nuts, great balance of variety and region.
Bright crimson with ruby hues. Generous layers of ripe red fruits combining with notes of mint and spice. The wine has a nice silky texture mouth-feel complimenting red berry characters with a touch of peppery spice from underlying oak and integrated tannins. Great with duck pot pie, herb lamb shanks or char-grilled antipasto, perfect for any meat dish.
Very pale straw with a green tinge. Tight and bright early picked peach and melon notes carried on a weighty palate, culminating in a fresh and crisp finish with the most interesting of oak nuances. Medium bodied, seriously delicious Australian Chardonnay!

"Leather polish, blackcurrant, blueberries and prune. Crushed black pepper and mace. Here, oak adds a layer of complexity to the black- and blue-fruited core. Juicy acidity and even flow. Good flavour for the pricepoint."
Halliday Wine Companion August 2024
Ray Jordan's Top 100 Reds Under $15: "A simple, juicy, red-fruited blend, offering a delicious confectionery-like palate. Plenty of red berry flavours, lifted with a little spice and pepper. Perfect for drinking now."
Ray Jordan July 2024
"Deep purple-red colour; sweet blackberry fruit and coffee grounds on the nose, bold and straightforward, some green/stalky/leafy flavours and high acidity, adding to the astringency that lingers on the finish."
The Real Review February 2024
Very pale straw colour, clean citrus and floral notes are complex with fresh cream and bread dough aromas. The fine bubbles provide a creamy texture, while the delicate acidity balances the fresh fruit.
Made with partial oak fermentation and careful lees stirring, the De Bortoli Buttery Chardonnay achieves its hallmark creamy mouthfeel without losing freshness. Notes of peach, pineapple, and toasty oak are seamlessly woven with hints of butter and caramel, leading to a long, silky finish. Whether enjoyed on its own or paired with roast chicken, seafood in cream sauce, or soft cheeses, it’s a wine that delivers comfort, flavour, and charm in every glass
Reviews:
"I was concerned that this might be too rich and exaggerated, especially after the initial aromas of butterscotch on the nose, but no need to worry. There’s enough fruit flavours here to bring a sense of balance and freshness. Stonefruit flavours with peach and citrus, a round, plump mouthfeel, and a hint of vanilla with the oak. It’s a smart combination."
Warrnambool Standard April 2025
"Medium straw gold with green edges. Fresh bread crust, preserved lemon, ripe yellow melon, white peach flesh, butterscotch, creamed honey, crushed white salt, roast pork flesh and a little hessian sack. Full and fleshy. There’s a touch of struck match and white quartz stoniness to give some interest and balance over lemon curd, peach melba and nougat. The finish is still crisp with a bitter herb nuance. It’s unapologetically big in style, but showing some class."
Vinonotebook April 2025
Pale straw in colour with a lively green tinge. The nose displays freshly crushed grapes, with lemon scents and a hint of musk. The palate is lively and fresh as one would expect from a frizzante style wine. The palate tastes of freshly crushed grapes with just a squeeze of lemon & ginger on the finish. The fruit was picked and pressed cold, in new state of the art bag presses. Juice was left to settle naturally and then racked clean. The wine was fermented cold to retain fresh fruit characters. Fermentation was stopped once a balance was reached between alcohol, sweetness, acidity and bubbles.

Decades since first release, this trusted everyday range of wines is best enjoyed with family and friends. The Shiraz was harvested in the cool of the early morning, following a short period of skin contact before being pressed to achieve the delicate pale colour.
Pale salmon pink in colour with suggestions of rose petal, wild strawberry and crisp red apples. A succulent palate with a smattering of sweetness and underlying acidity providing symmetry to the mouthfeel and life of this wine. Enjoy a glass while relaxing by the pool or in the garden, with a selection of afternoon appetizers. Or an ideal accompaniment to a Niçoise Salad or Vegetable Terrine.

Rich aromas of dark plum, blackberry, and mocha are layered with notes of black pepper and smoky char, a nod to the “woodfired” character. The palate is full-bodied and generous, with plush dark fruit, hints of vanilla, and velvety tannins leading to a long, satisfying finish.
The long maceration times on skins and the porous nature of the clay amphora produces quite ethereal style Cabernet. Lighter initially but very stable colour and fine tannin and with a bright aging future. Bright, medium-bodied red, haunting, ethereal, scented autumnal aromas. Mouth-filling flavours, quite supple, fine tannin, gentle, earthen and complex.
