The wine has been finding its style, and in the 2000s, they believe they are finding it through more elegance and less extraction, with fruit and more integration of the oak, leaving the initial model of Bordeaux, or later in Napa, and now admitting that it’s a more Mediterranean expression of the Cabernet.
It’s vibrant, tasty and lively, with focused and clean aromas and flavours and polished and elegant tannins. It has a tasty, long finish, lifted by the freshness and a chalky, mineral, almost salty touch. This feels long-lived through balance and good acidity.

Aged for over a year in French barrels, this beautiful Pinot Noir reflect the classic Russian River/Green Valley fruit: dark berries and a hint of orange peel. It is very easy to mix with all, the orchard fruits like peach, pear apricot. We would recommend a Monin Green Apple fizz. It is a really nice combination of Monin Manzana Verde liqueur, gin, lemon juice, egg white shaken and topped with soda or ginger ale for a special one. This Sauvignon Blanc has become known as a benchmark for Adelaide Hills, and Australian whites. The familiar Shaw + Smith take on clean, lean Sauvignon Blanc continues to confidently champion a distinctive Adelaide Hills style rather than chase other more overt and pungent examples.
Bursting from the glass comes passionfruit pulp scooped out of the hull, guava and honeydew wedges. Aromas of subtle jasmine blossom and white grapefruit juice. The palate takes on more of a lemon citrus tone with nashi pear and crisp Johnny apple flesh. A luscious mouth feel is complemented by racy acidity and the wine finishes with a swift crispness that only the Hills can provide. Undisputedly symbolic of the Speri company, the Amarone Monte Sant’Urbano is a superb example of a fine, classic wine. It is an extraordinary wine with great complexity and a vigorous structure which has always been top for its elegance and quality. After carefully selecting the best bunches from the prestigious Monte Sant’Urbano vineyard, the grapes are left to dry for a long period (3-4 months depending on the vintage year). This creates a wine with plenty of structure and softness which will certainly age well.
Enticing scents of spiced plum, pipe tobacco, crushed mint, new leather and a whiff of smoke come to the forefront. The full-bodied, velvety palate boasts dried cherry, raspberry compote, star anise and a graphite note. Fine-grained tannins provide the firm but elegant framework while fresh acidity keeps it balanced.

Released in late 2022, Intense Arabica part of the 2nd release from Macallan’s ‘The Harmony Collection’, following the study around Cacao. The project is spearheaded by the distilleries efforts to focus on sustainability. Inspired by the Arabica Coffee bean, grown in Ethiopia, it is a rich, creamy and moreish whisky that brings rich fruits, dried oak and an abundance of dark chocolate and coffee on the nose, palate and finish, resulting in a truly incredible drinking experience that could only be created by true masters, like those working at Macallan.
Macallan Whisky Maker Steven Bremner worked with world renowned coffee experts to produce the perfect whisky to be paired with high quality coffee. The result has been aged in ex-Sherry European and American oak casks. In line with The Macallan’s commitment to be more sustainable and eco-friendly in its packaging, Intense Arabica is presented in a 100% recyclable and biodegradable box which is made using natural by-products in the coffee-making process. These include sustainably sourced coffee bean husks. The one-of-a-kind packaging is concocted in partnership with Italian paper mill, Michele Posocco.
