The original Laphroaig, distilled the same way today as when Ian Hunter invented it over 75 years ago. In making Laphroaig, malted barley is dried over a peat fire. The smoke from this peat, found only on Islay, gives Laphroaig its particularly rich flavour. Those enjoying the 10 Year Old will first notice the bold, smoky taste, followed by a hint of seaweed and a surprising sweetness. This full-bodied variant is the foundation of all Laphroaig expressions and comes with a long finish.

Bols Cacao Brown is a dark liqueur packed with the rich flavour of bitter, dark chocolate and hints of orange and vanilla. Because the cacao (chocolate) flavour comes from the percolation of cacao beans, Bols Creme de Cacao Brown tastes more like dark chocolate than the distilled-not-percolated Bols Creme de Cacao White, which tastes more like milk chocolate. Creme de Cacao liqueur has been around for a very long time, and Bols has always been the predominant brand, featuring in both the original Alexander and the wildly popular variant, the Brandy Alexander. In the 80s, Bols Creme de Cacao was used principally in creamy and ice cream drinks, but lately it has proved supremely adaptable to various after-dinner cocktails like the Mulata Daiquiri and After Eight cocktail.

The grapes, hand-selected and chilled overnight, are whole cluster pressed and the decanted must is then transferred to French oak barrels for fermentation, with a new wood percentage varying between 5% and 20%. After alcoholic fermentation, malolactic fermentation follows to balance the acidity and provide greater roundness. The wine matures on fine lees until bottling, scheduled for the summer following the harvest.

The aromatic profile is complex and refined, with notes of caramelized pear, ripe apple, and apricot blending with hints of melon, yellow plum, and vanilla spices. On the palate, prominent mineral freshness and fruit richness lead to a long and harmonious finish.  Excellent pairing with pizzas with intense flavors, tasty risottos, or white meats with aromatic sides.

Inspired by the Solera system used in Spanish sherry-making, each batch is harmonised in a large oak vat to achieve a perfectly balanced flavour. The result is a whisky of depth and harmony, with layers of sweetness and spice that linger long after each sip — an extraordinary example of Glenfiddich’s innovation and artistry.

Exemplifying our family’s tradition of innovation, the 15 Year Old expression is created using a technique pioneered by the Malt Master and its warm, spicy flavours are transformed with the alchemy of the Solera Vat. Aged in European oak sherry casks and new oak casks, the whisky is mellowed in our unique Solera Vat, a large oak tun inspired by the sherry bodegas of Spain and Portugal. Never emptied, and kept half full of whiskies since 1998, their Solera Vat is the culmination of curious minds and the pioneering spirit of our family. This 15 Year Old single malt is encased in a specially-commissioned, crimson glass decanter, as an ode to the battle of fire and ice that signified Ragnarök, the end of the old word and the beginning of the new in Norse mythology.

The white of the vintage is the 2016 Domaine de Chevalier Blanc, which comes from a high-density planting of 30-year-old vines located west and south of the town of Leognan. A blend of 75% Sauvignon and 25% Semillon raised in 35% new barrels, it offers a massive bouquet of crushed citrus, salty minerality, white flowers, and grapefruit. Racy, full-bodied, concentrated and beautifully textured, it’s a brilliant wine that has more flesh and texture than the 2015 and will keep for two decades or more. Hats off to the team at Domaine de Chevalier for this brilliant, brilliant white! 

Composed of 70% Cabernet Sauvignon, 23% Merlot, 6% Cabernet Franc and 1% Petit Verdot, the 2017 Pichon Longueville Comtesse de Lalande has a medium to deep garnet-purple color and is a little closed to begin, soon revealing floral notes of lilacs and lavender over a core of black raspberries, warm blackberries and forest floor plus touches of star anise and stewed black tea. Medium-bodied, the palate is a bundle of energy and tension with softly played tannins and beautiful floral and black fruit layers, finishing with a long-lingering whisper.

John Walker & Sons ‘XR 21’ was created to honour Alexander Walker II knighthood received from King George V in 1920, given for his services to the nation & his devotion to create exceptional whiskies. Inspired by Sir Alexander’s own hand-written notes, this is blended from the exclusive Johnnie Walker reserve of rare whiskies, all of which have been matured for a full 21 years.

Assured, balanced and elegant, it has intriguing layers of intensity that are both surprising and delightful. Sweet honey and tempered spices come cloaked in warming smoke. Citrus zest, ripened tropical fruits and caramel swirl within hints of tobacco and raisins. Soil : Clay, chalk and marl

Site : In the heart of the Mâcon wine growing region, South of Burgundy. The two villages Viré and Clessé form a unique "terroir" on slopes facing South-East. In Viré, the soil is chalky with large layers of clay. In Clessé , the soil structure is slightly different with a combination of chalk and clay mixed with liasic marls combined with oyster- fossils which convey to the wine a specific minerality.This is one of the best white wines of the region combining suppleness and minerality.

The Vintage 2022 : After a winter characterized by marked variations in temperature between January and February, spring started with mild temperatures. A sequence of cold weather in April was followed by warm temperatures in May but the lack of water was very noticeable and could not be compensated by the rainy storms of June. Summer was marked by several and long heat waves and the storms of the end of August were most welcome. The harvest at Chanson started on August 30 with a team of 100 persons and ended on 13th September. 2022 vintage was quite generous both in volume and quality and the white wines are well-balanced, precise and refreshing.

Tasting : Pale gold colour. Refreshing fragrances of white flowers mixed with white fruit and fresh muscat on a hint of wet stone. Well-balanced and lively. Very nice and refreshing finish.

Food pairing : Fresh and yet flavoursome Vietnamese chicken or fish dishes would work wonderfully, as would a range of fresh salads and even slightly creamy chicken pasta or tofu stir fry. You could even go for fish tacos or mild Mexican dishes (but chilli will overwhelm the flavours).
