The original Laphroaig, distilled the same way today as when Ian Hunter invented it over 75 years ago. In making Laphroaig, malted barley is dried over a peat fire. Made from organic Tequilana Weber Blue Agaves which are grown for over 9 years before slow cooking in traditional ovens. After some neutral resting time, it is bottled in this tall, handsome traditional ‘Talavera’ glass decanter, which is about 38cm tall. At full strength, the initial aroma is a beguiling mix of warm Christmas cake, walnut oil and parma violets fused with fresh ocean spice, cedar and pine needles falling from the Christmas tree. A smouldering coal fire and the scent of well-oiled leather brings warmth. The sweetness of treacle toffees and chocolate-coated raisins emerge through the smoke. With water, the deep smokiness increases in intensity, reminiscent of a fired Christmas pudding.

Despite its higher strength, Redbreast 12 Cask Strength remains remarkably balanced and approachable. The vibrant fruitiness, sherry cask influence, and silky mouthfeel that define Redbreast are all present, but amplified with added depth and complexity. On the nose, it opens with bold notes of dried figs, sultanas, toasted oak, and hints of vanilla pod. The palate is rich and full-bodied, bursting with dark fruits, roasted nuts, sweet spice, and a creamy toffee undertone, all carried by the warmth of its natural cask strength. The finish is long and lingering, with layers of spice, oak, and sherry sweetness tapering into a satisfying glow.
Undisputedly symbolic of the Speri company, the Amarone Monte Sant’Urbano is a superb example of a fine, classic wine. It is an extraordinary wine with great complexity and a vigorous structure which has always been top for its elegance and quality. After carefully selecting the best bunches from the prestigious Monte Sant’Urbano vineyard, the grapes are left to dry for a long period (3-4 months depending on the vintage year). This creates a wine with plenty of structure and softness which will certainly age well.
This complex and fragrant wine opens with dried violet, black plum and cooking spice aromas. A fresh, lightly exotic nose, offering dates, figs, fresh earth and a hint of toasted coconut. On the palate there’s a fresh, focused bead of ripe and dried fruit, riding equally intense, firm tannins. Long finish. From organically grown grapes. There’s a youthful feel to this. It’s just at the start of a long life.

This 12-year-old Speyside single malt comes from the new Mortlach range, launched in 2018. Known as ‘the Beast of Dufftown’, Mortlach is distilled 2.81 times in a complicated process referred to simply as ‘The Way’. This single malt, dubbed ‘The Wee Witchie’, is matured in American and European oak ex-bourbon and sherry casks before being bottled at 43.4% abv. It’s drawn from bourbon and sherry casks, and packs a hearty punch of meaty Mortlach-y malt at its core, supported by dried fruit and toffee notes. Meaty and sulphurous, this expression showcases the raw character of the distillery.
The Balvenie DoubleWood 12 year old single malt whisky gains its distinctive character from being matured in two wood types. To make The Balvenie DoubleWood, David Stewart MBE takes whisky that has spent at least 12 years in traditional whisky casks, American Oak ex-Bourbon barrels and hogsheads, and moves it to Spanish oak ex-Oloroso sherry casks for an additional nine months. Each stage lends different qualities to the resulting single malt whisky.
The traditional casks soften and add delicate character, the sherry wood brings depth and fullness of flavour and the final few months in our tuns allow the whiskies to marry harmoniously. Sweet fruit and Oloroso sherry notes, layered with honey and vanilla. Smooth and mellow with beautifully combined flavours, nutty sweetness, cinnamon spiciness and a delicately proportioned layer of sherry.
Like the world’s finest gins, Ryan Reynolds’s Aviation Gin is distilled using a proprietary maceration recipe that produces a pure medley of botanical flavour. It all starts with our precise blend of botanicals – cardamom, coriander, French lavender, anise seed, sarsaparilla, juniper, and two kinds of orange peel. The botanicals are suspended in a pure, neutral grain spirit for 18 hours in macerating tanks.
The macerate is then pumped into a still along with pure water. Steam jackets heat the macerate, the vapours go into the condenser, which cools the vapours to form the gin distillate. In a meticulously monitored process, the first fluid leaving the still, the ‘heads’, is removed. Collecting the ‘heart of the spirit’ throughout the run, the distillers then determine the end of the cycle and make the final cut, ‘the tails’. This process takes approximately 7 hours and at this point, the ‘heart cut’ is 142 proof.
The ‘heart cut’ is transferred to a blending tank where pure water is added, bringing the gin to the desired 84 proof. It is then sent to the bottling line for filling, capping, and labelling. Aviation is then hand-packed into boxes and ready to ship.
Intriguing and completely unique, with earthy with prominent spices and subtle floral hints. Weighty and mouth-coating with a soft juciness showing notes of orange and anise. A long fresh finish reminiscent of the pine forests of the Pacific north-west. A fantastic base for cocktails and in particular the Aviation cocktail after which the brand is named; Aviation Gin, lemon juice, Maraschino liqueur and Violette liqueur.
The Matusalem Rum company was started by the Camp brothers in 1872, originally in Cuba, but they are now based in the Dominican Republic. The key to Matusalems’s Gran Reserva rum’s complexity is the Solera aging process, where various mature rums are carefully blended together, with the main component being 15 years old. This is a classic example of aged Cuban rum.
A soft nose of toffee and butter prepare to a satiny entry leads to a round, fruity-yet-dry, medium-bodied palate with praline and brown spice notes. Finishes with smooth spicy oak flavors. A finely balanced, very silky, aged rum.
Made in the heart of London from 12 hand-selected botanicals including Japanese Sencha and Chinese Green teas, Beefeater 24 is Master Distiller, Desmond Payne’s, contribution to the Beefeater legacy: a sophisticated and modern interpretation to inspire top mixologists around the world to create contemporary cocktails. A light bulb moment when travelling in Japan inspired Desmond Payne to realise tea’s potential as a botanical. In Japan, quinine was strictly banned from the production of tonics resulting in a far sweeter mixer for the traditional G&T. To quench his thirst, Desmond chose to mix Beefeater gin with chilled green tea, as an alternative to the sweet local tonics. The resulting gin and tea combination was remarkable and inspired Desmond to spend the next 18 months trialing and experimenting with different teas and botanical blends.
The inclusion of Japanese Sencha and Chinese Green Tea in the botanical blend distinguishes Beefeater 24 from any other gin, helping to shape its unique aroma and smoothness, while the addition of grapefruit peel ensures that Beefeater’s signature citrus flavour remains present. The result is a gin with an incredible smoothness making it effortlessly mixable and perfect for modern cocktail culture.
It is a beautiful, brilliant straw-yellow colour in appearance with a particularly fine and persistent perlage. The very thin string of bubbles are pleasing to the palate, creating that pleasant sensation we call creaminess. The bouquet is very complex and is initially dominated by notes of cedar and bergamot, while hints of passion fruit blend with floral notes of iris, acacia and orange blossom. The following aromas are characterised by obvious scents of wildflower honey and candied citrus fruits and the finish explodes with hints of pastry and bread crust. In the mouth it is clean, fresh and minerally, and the final taste is very persistent.
No.3 is the London Dry Gin distilled to a proprietary recipe of Berry Bros. & Rudd, London’s oldest wine and spirit merchant. The name No.3 refers to our address in St James’s Street, London.
Berry Bros & Rudd created No.3 to be the last word in gin: a perfect combination of juniper, citrus and spice. The critics agree. So far, No.3 has been named the world’s best gin four times at the International Spirits Challenge.
With juniper at its heart, it unashamedly celebrates the integrity and character of traditional London Dry Gin: three fruits and three spices distilled in traditional copper pot stills. The nose is bright, crisp and fresh with an uplifting welcome of juniper. The palate: Juniper to the fore, supported by floral notes and spicy, warm cardamom. Plenty of citrus ‘zing’ complemented by the gingery spiciness of coriander. The earthy dryness of angelica kicks in on the finish.

Mount Gay Black Barrel is a blend of old rums, matured for between three and seven years, and finished in heavily-charred ex-bourbon casks for six months before bottling. Complex aromas of toasted oak, warm spices, apples and oranges fill the nose. The palate offers a balance of bold spices and juicy fruit, with hints of sweet caramel and creamy vanilla.
Ballantine’s 17yo is packed with flavour and opens with a nose of sweet caramel, vanilla and wooded notes. There is also a delicate smoky note that wafts through and mingles really well with the sweeter notes. It is dull and reassuring, giving the brighter flavours a backboard to bounce off. The palate is elegantly sweet. Caramel, vanilla and big notes of honey take over. These give it a smooth and mellow mouth feel as well. The honey is earthy and thick, with a really lovely orchard flavour to it. it ties in well with oak flavours and a little hint of spice that also appears. There is a dash of cinnamon and nutmeg that combine everything together and give a lovely warming sensation to the smoke.
