On the palate it shows a beautiful amplitude with a lively and tasty balance. Superb minty finish marked by beautiful flavors of ripe white fruits (vine peach). We feel these southern notes of garrigue and black olive as well as a discreet touch of vanilla. It is an expressive wine dominated by ripe fruit and spices (roasted mocha, blueberry and wild blackberry). Good aging potential with a more promising development.

This wine is crafted from Merlot vines planted in our vineyards in 1997, along with a small percentage of Petit Verdot, a variety we have been cultivating since 2006. The name "3055" is a nod to Jean Leon’s New York cab license number, revealing the man behind the legend: an idealist who rose from humble beginnings to achieve his dream of opening the most famous restaurant in Hollywood and creating his own namesake wine.
This wine is aromatic, elegant, seductive, velvety, and contemporary, made from Merlot and Petit Verdot grown in organic vineyards. It boasts a very intense nose and a medium-bodied, balanced palate with pronounced notes of red fruit and spices. Enjoy its long, lingering finish..

Fermented entirely in aged oak barrels, sealed with a natural cork and cellar aged for more than twice the time required by the appellation, with a moderate dosage, 8 grams per liter. To the nose, La Côte aux Enfants Champagne 2013 emanates aromas of mint and ripe fruit, rounded off with aromas of acacia honey and citrus fruit. The Lion & Dragon Rosé from Château Roubine in Provence reveals a bright, light red color in the swirled glass. When swirling the wine glass, one can perceive a first-class balance in this rosé wine, as it does not stand out on the walls of the glass, neither watery nor syrupy or liqueur-like. Brilliant peach skin. Red berries and pit fruits on the nose, and a floral nuance in the background. Silky and open-knit, showing good depth as well as energy to the red currant and nectarine flavors, which pick up a refreshingly bitter orange zest quality on the back half. Finishes long and juicy, with a repeating floral note and subtle grip. Flavorful and intense on the medium- to full-bodied palate yet so very restrained and elegant. Super-value wine as always.

Bright ruby colour. Intense aromas of ripe red berries mixed with spices and vanilla. Complex and well-balanced with a tight and deep texture. Well-shaped tannins. Long and spicy aftertaste. Great with red meat grilled or en sauce and all sorts of cheeses, especially our local cheeses like Epoisses, Citeaux and Langres.
The nose is characterized by wood, the fruit behind it is a mix of red and dark berries, a hint of cream resonates, fine and becoming more and more beautiful with air. Straight in the beginning, with just the right concentration, good structure, distinctive, slightly drying tannins, the wine is lively and fresh, has a red-fruity, pleasantly long finish.

Bin 2 was first released in 1960, yet was discontinued in Australia in the 1970s at the height of the White Wine boom. The original Bin 2 was an ‘Australian Burgundy’ style (despite its Rhone varieties) – typically a soft, medium-bodied wine based on Shiraz. The Bin 2 blend of Shiraz and Mataro is still relatively uncommon in Australian table wines.
Also known as Monastrell or Mourvedre, Mataro was introduced to Australia in the 1830s. Sometimes used in fortified wine production, this grape is widely planted in the Barossa Valley. It is greatly valued by winemakers for its blending attributes, adding complexity and palate grip. Interest in Bin 2 has grown as the popularity of traditional Rhone varieties and blends continues to flourish. t’s bold and dark, creamy and concentrated, with blackberried fruit, suede-like notes, clove and vanilla cream all laid on. This wasn’t bottled at the time of the annual tasting so a review bottle was sent: I opened it and promptly polished off more than I’d care to responsibly admit. It has both heaviness and heat but it swooshes through the mouth with confidence and ease.
The wine has a dark color with purple hues. Gourmand nose on red fruits and hints of spices. The palate is warm and enveloping around silky tannins with a chalky touch. Full-bodied, youthful in appearance, red berries, cassis, and plums interweave cigar, violet, sweet vanilla, clove and nutmeg. The fruit is succulent with vibrancy and intensity, enriched by fine-grained tannin extraction, and lingers with cigar and smoky fragrance, finishing with a rich yet vibrant chewy palate. Match with roasted lamb and beef short ribs over the next 8+ years.

Soil : Clay, chalk and marl
Site : In the heart of the Mâcon wine growing region, South of Burgundy. The two villages Viré and Clessé form a unique "terroir" on slopes facing South-East. In Viré, the soil is chalky with large layers of clay. In Clessé , the soil structure is slightly different with a combination of chalk and clay mixed with liasic marls combined with oyster- fossils which convey to the wine a specific minerality.This is one of the best white wines of the region combining suppleness and minerality.
The Vintage 2022 : After a winter characterized by marked variations in temperature between January and February, spring started with mild temperatures. A sequence of cold weather in April was followed by warm temperatures in May but the lack of water was very noticeable and could not be compensated by the rainy storms of June. Summer was marked by several and long heat waves and the storms of the end of August were most welcome. The harvest at Chanson started on August 30 with a team of 100 persons and ended on 13th September. 2022 vintage was quite generous both in volume and quality and the white wines are well-balanced, precise and refreshing.
Tasting : Pale gold colour. Refreshing fragrances of white flowers mixed with white fruit and fresh muscat on a hint of wet stone. Well-balanced and lively. Very nice and refreshing finish.
Food pairing : Fresh and yet flavoursome Vietnamese chicken or fish dishes would work wonderfully, as would a range of fresh salads and even slightly creamy chicken pasta or tofu stir fry. You could even go for fish tacos or mild Mexican dishes (but chilli will overwhelm the flavours).
