The 2016 Angelus is composed of 60% Merlot and 40% Cabernet Franc, aged 18 to 22 months in new barrels and foudres. Deep garnet-purple colored, it drifts effortlessly out of the glass with sensuous notes of lavender, candied violets, garrigue, Ceylon tea and iron ore with a core of warm black cherries, mulberries, ripe plums and aniseed plus wafts of cedar chest and cloves. Medium to full-bodied, the perfumed fruit whispers of great intensity and depth, with the vivacious fruit well knit into the plush, seductive frame of velvety tannins and seamless freshness, finishing long and mineral laced. Still very tightly wound with amazing tension at this stage, it truly needs a good 6-8 more years in bottle to deliver the fully expressed layers that this soft-spoken, profound beauty promises.

Howard Park’s winemaking philosophy is to craft elegant, age-worthy wines from our best sites in the Margaret River and Great Southern wine regions of Western Australia. Critical site selection, meticulous viticulture and detailed winemaking underline each Icon wine. In name, the Icon wines pay homage to significant members of the Burch family.
The A.S.W. is the first wine to acknowledge Amy Burch’s side of the family. Co-owner Amy has been deeply involved in Howard Park from the very early days. Coincidentally, Amy’s parents share the initials, A.S.W. Her father, Alex Stephen Wee, was a successful Singaporean business person; a self-made man who arrived in Singapore from East Malaysia in 1946 with 1 Singapore dollar. Amy’s mother, Annie Sheila Wee, had a cultural affinity with Red Wine due to her upbringing by French & Irish nuns as a boarder in Singapore. She still favours a glass of Shiraz to this day. The Wees came to Australia in the 1960s. Amy, is proud to commemorate her parents and the sum of all her family’s efforts in this special wine.
The A.S.W. is a stylistic departure for Howard Park, being a red blend of all Margaret River fruit, and the only wine with a significant use of American oak. Cabernet parcels are fermented in static fermenters fitted with heading down boards to maintain a submerged cap and gentle extract of flavour and tannins. The Shiraz parcels are fermented in 4t open fermenters with pneumatic pigeage and are retained on skins at the end of fermentation for several weeks. Matured separately in French oak for 18 months, before blending and then a further two months elevage in American oak after blending.
Intense blueberry, vanilla, chocolate, and dark cherry, supported by a hint of black olive and subtle cinnamon and anise seasoning. The palate is plush and brimming with powerful berry notes, intermingled with vanilla and coconut. Persistent flavours, fine ripe tannins, a lavish texture, and spice complexity have melded well to produce this opulent and luxuriant wine.
Soil : Clay and limestone
Site : Chanson owns a vineyard of 5.4 hectares in premier Cru "Les Vergelesses". The plot is located in a hollow at the bottom of the hill of Corton and its clay and limestone soil combination gives wines with a specific structure.
The Vintage 2022 : After a winter characterized by marked variations in temperature between January and February, spring started with mild temperatures. A sequence of cold weather in April was followed by warm temperatures in May but the lack of water was very noticeable and could not be compensated by the rainy storms of June. Summer was marked by several and long heat waves and the storms of the end of August were most welcome. The harvest at Chanson started on August 30 with a team of 100 persons and ended on September 13. 2022 vintage was quite generous both in volume and quality and the red wines are generous and well-balanced with an outstanding crunchy fruit.
Tasting : Dark purple color. Intense aromas of ripe dark fruit (black cherries and blackberries) mixed with spices and toasted notes. Complex and well-balanced. Deep, dense and tight texture. Solid tannic structure. Refined oak note. Long and generous aftertaste.
Food pairing : Enjoy with grilled steack (entrecôte), game, stuffed meat, and all the local cheeses (Brillat-Savarin, Epoisses, Citeaux, Langres).

Jack Daniel’s is made in Lynchburg, Tennessee, a small town with the population of around 400, located 75 miles south-east of Nashville. The 2016 Chapelle d’Ausone has the highest proportion of Cabernet Franc at 56% this year, complemented by 22% Merlot and 22% Cabernet Sauvignon. Matured in 80% new oak, it has a very floral, incense and rose petal-scented bouquet that blossoms from the glass. There is an underlying mineral vein here, but it may take a few years to come out. The palate is medium-bodied with supple tannin, crisp acidity, cohesive with good backbone, with fine salinite on the finish.

The casks are taken from a single cooperage in order to ensure the infinite quality and character at the heart of this rich single malt. The cooperage exclusively creates Spanish oak casks which, once seasoned with sherry, create the unique flavour of this exquisite whisky. Raisin, dates and figs dominate whilst sultana and toffee apples add texture and depth. The weight of flavour from the raisins is dark and rich with great viscosity. Dry ginger and soft cinnamon hint at the edges the edges. Dark chocolate is majestic, vanilla sweetness lingers in the background. Heavy and sumptuous. A rich fruit cake of raisin, dates and figs, apples, sultanas, orange then ginger, nutmeg, cinnamon and hints of clove. Oak notes are like velvet, soft and chic. Silky smooth with a long and full finish.

Dried fruits ripen, then soften. Vanilla accompanies green apple hand in hand. Ginger, nutmeg and cinnamon create an ensemble in the background, with strong notes of polished oak and a depth of resinous, juicy oranges. The palate opens rich in wood spices, slowly showing all their viscosity. Wood smoke flits in and out. The heavier raisin and sultana flavours take over, meandering to a long full finish.
This highly awarded and pedigreed botrytised dessert wine is made in the style of the great French Sauternes. A medley of quince, fig, honey, creme brulee and citrus marmalade with a refreshing acidity which offsets the richness and lusciousness to give a deftly balanced finish. Crafted from organically-grown grapes
A perfectly balanced blend of Scottish heather and honey, with delicate notes of unripened pear and a hint of oak. A delightful blend of soft vanilla with honey and blooming heather, well rounded with a slight smoky sensation emerging. Medium finish, slightly dry with lingering heather/honey overtones, and the faintest touch of smoke.
Triple distilled then matured for over eighteen years for a refined whisky. The result: a refreshing Lowland Single Malt whisky with the added infusion of ripe citrus and green tea, the warmth of toasted almonds and the signature smooth, delicate Auchentoshan taste.
Expect a deep golden summer barley colour to each glass of this Single Malt. A smooth whisky taste with a floral freshness and a burst of sweet barley at first. Made from organic Tequilana Weber Blue Agaves which are grown for over 9 years before slow cooking in traditional ovens. The fermentation is done using the company’s secret blend of yeasts, and then comes distillation followed by triple filtration. It is masterfully aged for eight months in bourbon barrels, and is bottled in these tall, handsome traditional ‘Talavera’ decanters. This exceptionally smooth tequila is recognized worldwide as one of the best reposados.
