The ‘Rarissismes’ range is a selection of the best single vintage Cognacs in the Camus’s Cellar, a pure expression of the year, coming in a very limited volume, for a guaranteed outstanding Cognac.
Marked by heavy hailstorms, followed by a very hot summer, the 1983 harvest was distilled the year of the 120th anniversary of the House of Camus. Time and expertise have done their work ever since, revealing the profound harmony of the Fins Bois with its notes of fruit, vanilla and spice. Evoking all at once the heritage and the contemporary character of the brand, this Cru Fins Bois 1983 Cognac’s style and design are gracefully discreet, allowing the antique gold robe, highlighted with amber tints of this rare Cognac.
The nose is open and complex combining nutmeg aromas with a dash of orange zest and sweet spice, backed with subtle hints of undergrowth. The palate is balanced, rounded and dense, with a velvety-smooth finish. The hints of nutmeg and other spices are a sure sign of maturity, while the vine flower aromas add a touch of finesse and the candied citrus fruit aromas ensure that the 1983 still retains a vibrant freshness.
This is sourced from 3 small barrels, bottled under Bailiff’s supervision October 16th 2013 after 30 Years in oak, drawing a mere 693L, bringing only 990 bottles available worldwide, all numbered.

This unique blend of Remy Martin 1738 Accord Royal commemorates the reward of excellence bestowed on Remy Martin by the King Louis XV of France in 1738.
A blend of uniquely oaky eaux-de-vie, particularly smooth. A long & particularly soft barrel toasting brings extraordinary smoothness and subtle notes of toasted bread, vanilla, brioche to 1738 Accord Royal.
1738 Accord Royal can be enjoyed neat, on ice or in a cocktail, and is particularly recommended in classic cocktails like the Sidecar, in a Collins, or in signature cocktails made by the most talented bartenders. 1738 Accord Royal mixes marvelously with citrus-flavors.
Clear brilliant yellow colour, wonderful intensity and freshness on the nose with predominant citrus notes and aromas of white fruit, complemented by notes of tropical fruit . The entry on the palate is voluptuous and elegant, with well balanced acidity.
Pairs perfectly with shellfish, octopus and squid. Goes well with oily fish and grilled sole or hake. Serving temperature: between 7ºC and 9ºC.
Certified organic wine
The 2008 vintage is characterised by its remarkable precision and opulence. Composed of 71% Pinot Noir and 29% Chardonnay. A total of 18 crus can be find in the blending, mostly Aÿ and Verzenay for Pinot Noir and Le Mesnil-sur-Oger and Cramant for Chardonnay. The fermentation is entirely in oak barrels. Bollinger R.D. is sold just a few months after being disgorged, with a very low dosage known as “extra brut”, at just 3 grams per litre. The recent disgorgement guarantees the remarkable freshness of the wine. Enticing aromas of marzipan, stewed apricots, honey and breadcrumbs accompany fresh notes of bergamot. A rich, precise mousse. Citrus notes are followed by flavours of Mirabelle plums and vine peaches. A very vivacious wine which unfolds to reveal exceptional complexity. Notes of fresh hazelnuts and salinity combine to create an intense, everlasting finish. In order to showcase its unique style, we recommend serving Bollinger R.D. at a temperature of 12°C, then to appreciate the evolution of its aromas over the course of the tasting.

Aromas of blackberry, blackcurrant, cherry, and raspberry follow; a medley of red fruits dances with notes of almond. Exotic touches of mango follow, dissolving into tertiary scents of vanilla and a delicate woody aroma. On the palate the wine is plump, generous and enticing, reminiscent of Mirabelle plum jam. Texture and richness define the tasting experience. The finish blends note of chocolate and citrus fruits, bringing a touch of acidity, lengthened further by hints of schist. A hugely generous wine!

This wine pairs ideally with salmon tartare with pink peppercorns, sea bass in a citrus salt crust or a pike soufflé accompanied by pochouse sauce.

For the past 500 years the Borderies vineyards, Cognac’s smallest cru, have produced some of the greatest and most aromatic cognacs. Camus Borderies XO is a Single-Estate cognac produced exclusively from the Camus family’s private vineyards. All the wines come from this magnificent estate, the largest in the Borderies area, with vineyards surrounded by forests and naturally preserved areas. The Camus family ensures that the vineyards are cultivated in a sustainable way, preserving the environment and the wildlife. Each barrel is unique with wines from each parcel of the vineyards being distilled and aged in separate casks.
The eaux-de-vie used to make Camus Borderies XO Cognac have an astounding aromatic intensity and a remarkable velvety texture. Produced mainly from the most prized vines in the Domaine’s Camus estate, the wine is distilled on the lees before its long ageing in oak barrels. Each step in the ageing process has contributed to and enhanced the already rich and complex aromatic palette of this Cognac from the smallest and most highly favored of the AOC crus. Produced in limited quantities, Camus Borderies XO offers a rare and exquisite tasting experience.
Borderies XO is powerful, rich and creamy with a particularly velvety texture. It reveals intense sweet pastry aromas alongside notes of cinnamon, dried fruit, old port and violet. A hint of almond emerges in the long-lasting finish.

The 2015 Dom Pérignon is a lovely wine defined by the long cool growing season. Offering up aromas of crisp stone fruit tangerine oil buttered toast pear almonds and clear honey it’s medium to full-bodied ample and seamless with bright acids and a pillowy enveloping profile concluding with a long saline finish. Vincent Chaperon recalls that shatter at fruit set moderated yields and that a drying east wind in the weeks before harvest helped to maintain the good sanitation necessary to wait to pick at full maturity.

A blend and 75% Sauvignon Blanc and 25% Semillon, this beautifully textured wine is already balanced but has a fine future. The cool, crisp texture contrasts with ripe fruitiness and spice from wood aging. Features an atypical bitter orange edge that melds nicely with the core of lemon curd, gooseberry and nectarine notes. Flashes of verbena and orange blossom check in, leading to a long singed almond thread on the finish.

Lillet is a classic French Aperitif, crafted in the Bordeaux region since 1872. It is a blend of Bordeaux wine, macerated liqueurs (mostly citrus) and quinine which bring a delicious bitterness. Lillet Blanc is made with Sauvignon Blanc & Semillon and shows aromas of candied oranges, honey, pine resin and exotic fruits. Full and fleshy on the palate. Great served very chilled or in cocktails.
Exploring a new dimension of Martell Ageing Savoir-Faire, this is the latest incantation of the famous Martell VSOP. They exclusively age our eaux de vie in fine grained oak barrels, in order to enhance subtly the delicate fruity aromas of our spirits, crafted from Martell specific distillation method. When a barrel is called ‘Red’, a reference to the reddish color of aged wood, it has aged before other eaux-de-vie during at least 2 years up to 8 years, reaching the perfect stage of maturation for both the wood and the spirit.
For Martell VSOP aged in Red Barrels, our cellar master selected only these very rare red fine grained oak barrels to age this cognac, highlighting Martell specific ageing style.
At first, the bouquet is round and fresh, run through by intense fruity notes. The aromas of fresh yellow stone fruits, like cherry plum and baby Reine-Claude, are gently coated by subtle mellowed woody notes. Once in motion, the power of its aromas grows and gains depth, with fleshier fruits such as apricot or vine peach chiming in. In the mouth, it has a full, broad attack and unveils the same intense fruity tones, small plums and honeymoon peaches and apricots. The fruity flavours are marvelously enhanced by delicate notes of sweet spices from the wood of the russet barrels, the very same barrels that create that perfect balance between the expressiveness of the eaux-de-vie and refinement of the spiced notes.
Expertly finished in casks that once held the finest Caribbean rums, this whisky develops a warm, exotic sweetness that complements Balvenie’s signature honeyed depth. A patient process of maturation and marrying ensures a rounded, luxurious texture that defines The Balvenie’s craftsmanship.
