‘Lion et Dragon’ Red is among the greatest wines of Provence, a small batch production of hand-selected organically-grown grapes from the estate best parcels, aged in oak barrels. The Lion and Dragon, present on the estate coat of arms, derived from the Knights Templar history of the area: the dragon, emblem of the city of Draguignan, and the Lion representing the town of Lorgues – both placed under the protection of the Provence Sun.

The harvest is done by hand and the vinification is done by separate grape variety from the oldest plots of the estate. After destemming and crushing, a long vatting period of more than 1 month gives this wine all its structure and structure, and extracts its intense garnet colour. After natural fermentation thanks to indigenous yeasts, the wines are aged for 24 months in oak barrels to be then blended in vats and bottled.

Bright garnet colour with ruby reflections. The nose is very complex. It releases notes of cherry and black pepper. We feel these southern notes of garrigue and black olive as well as a discreet touch of vanilla. It is an expressive wine dominated by ripe fruit and spices (roasted mocha, blueberry and wild blackberry). Good aging potential with a more promising development. 

The quintessence of the great terroirs of Provence. Le Lion et Dragon rouge will go perfectly with game such as hare stew à la royale or veal cheek casserole with asparagus.
