The Chardonneret (goldfinch, represented on the label) feeds on the seeds of thistles that grow on dry land. This wine is like this little bird, very rare. Crafted from a blend of Sauvignon Blanc, Sauvignon gris and Sémillon from a small organically-grown plot at the estate, it brings only about 2,000 bottles per year. Picked up in crates all at once and then cold pressed, the vinification takes place in 400L French oak barrels before being moved to clay amphorae, where it is aged for over 6 months, intensifying the fruit purity.

Beautiful, limpid color, it is fine and gives off melted aromas of great subtlety. It exudes on the palate notes of citrus and exotic fruits of great freshness and complexity. The equally seductive finish is very rich.
