This annual gathering was a celebration of gastronomy, camaraderie, and the "art of the table"—the very values at the heart of La Chaîne’s mission. This year’s event was extra special, marking the induction of new members, a tradition that reflects the society’s ongoing commitment to fostering excellence within the culinary world.

What Is La Chaîne des Rôtisseurs?

Founded in 1248 as a guild of goose roasters, La Chaîne des Rôtisseurs was revived in 1950 to celebrate the culinary arts and the joy of dining together. Today, it’s an international organization that brings together both professionals and enthusiasts—from chefs and sommeliers to food lovers—who all share a passion for great food, fine wine, and fellowship​.

Beyond hosting extraordinary events like this gala, La Chaîne promotes the development of young talent through competitions for chefs and sommeliers. They also play a significant role in giving back, supporting charitable initiatives to improve the living conditions of those in need, particularly children​.

What’s the Big Deal About Food & Wine Pairing?

The Sparkling Start: Canapés & Oyster Bay Sparkling Cuvée Brut

From torched beef brochette to crispy chicken rice balls, the evening started with four playful bites that were light but packed with flavor. Paired with Oyster Bay Sparkling Cuvée Brut, the bubbles cleansed the palate between each bite, giving every dish its moment to shine. Sparkling wine isn’t just for celebrations—it’s the ultimate food-friendly wine, balancing richness with a refreshing edge.

Bonus treat? A cocktail by Camus Cognac—because why not kick off the night with something classy?

A Touch of Tuscany: Amuse-Bouche & Frescobaldi Remole Bianco

The Atlantic King Salmon Gravlax was marinated in a playful kerabu style, balancing savory notes with hints of fruit from dehydrated watermelon and a mango trio. This dish was all about complexity, and the Frescobaldi Remole Bianco rose to the challenge. Its vibrant acidity brought out the fish’s delicate flavors without overpowering the fruity accents—a pairing as refreshing as a cool breeze on a warm day.

Adventurous Bites: Appetizer Medley & De Bortoli Windy Peak Chardonnay

This course was full of surprises, featuring everything from soft-shell crab with tangy sour plum sauce to poached Sichuan chicken in spicy sesame dressing. These bold, diverse flavors were tamed beautifully by the Windy Peak Chardonnay. With its bright acidity and gentle fruit notes, it kept the flavors balanced, adding just the right lift to these punchy dishes.

Why does this matter? Without the right wine, flavors like spice and umami could overwhelm your palate. But this Chardonnay ensured every bite stayed exciting—right to the last.

A Rosé Moment: Seafood Menage & Château Roubine La Vie en Rose

When it comes to seafood, rosé is a hidden gem. This course featured a bouillabaisse of red snapper and fresh shellfish—a dish packed with briny depth. Enter Château Roubine La Vie en Rose, an organic Côtes de Provence rosé with delicate floral and berry notes. Its light body matched the finesse of the seafood, while its bright acidity cut through the dish’s richness, leaving a clean, refreshing finish.

It’s a reminder that rosé isn’t just for summer afternoons—it’s made for serious food.

Decisions, Decisions: Entrée & Château Peyredon Lagravette Haut-Médoc

Guests were spoiled with two equally tempting choices:

Whether you went for lamb or chicken, the Château Peyredon Lagravette Haut-Médoc 2018 was the perfect match. With its dark fruit flavors and structured tannins, this Bordeaux beauty amplified the lamb’s richness while also balancing the spices in the chicken. Bordeaux wines are a classic choice for a reason—they handle a wide range of flavors with elegance and power.

Sweet Endings: Dessert & Warre’s Otima 10 Years Tawny Port

Dessert was all about indulgence: a rich chocolate mousse with a berry compote. And the pairing? Warre’s Otima 10 Years Tawny Port. The port’s nutty, caramelized notes were like the perfect warm hug for the chocolate, creating a decadent, satisfying finish.

If you’ve never paired chocolate with tawny port before, trust us—you’re missing out. It’s a match made in dessert heaven.

To round off the evening, guests enjoyed a final touch of elegance with Camus Cognac, wrapping up the night with a smooth, aromatic finish.
